Vacuum duck breast


Sprinkle salt, pepper and rosemary on the meat and rub well on all sides to get the spices into the skin

This method of preparation differs from the steak made in the bag, because there the meat is steamed, while here it is made in its own juice.

During this time, you will continue to remove the fat from the pan
& bull You will let it cool to room temperature for 15 minutes and then cut it so that it does not dry out.

Filling and baking
The most important thing is that when you want to cook meat, you need to skin it and the fat, being careful not to eat the meat. Of course, for complete safety, you will clean the bird well, outside and inside and you will also remove the visible fat.
After that you will wash the case well, wipe it and add salt and pepper. Inside the bird you will introduce carrots, onions, celery and, if you want, an orange. For a crispier crust, with a special taste, you can grease the skin with orange juice.

You will tie the bird's legs, the wings will be inserted under it, and the skin in the area of ​​the neck will be secured with toothpicks.
Put water in a tray (2-4 tablespoons, depending on how big the sea is) and bake the bird initially at a higher temperature (200 degrees) for 1 hour. Every 20-30 minutes, the released fat will be removed. You will then leave it in the oven at 160 degrees for at least an hour or so when the meat reaches a temperature of 165 degrees. The juices coming out of it should be perfectly clear. "Before you cut it, you'll let it dry for another 15-20 minutes."


Marinated beef for a week

600-650 g of beef are marinated in a mixture of balsamic vinegar (two tablespoons), olive oil (four tablespoons) and ground pepper. Cover the bowl with foil and leave in the fridge for a week. After bringing to room temperature, fry on the hot grill for 3 minutes on each side, then let it rest for 10 minutes. The recipe reminds me of the trip from France on the occasion of an exchange of experience where the hosts prepared our traditional duck breast in pepper crust.

We place the couscous on the plate, then we put the broccoli, then the chopped duck breast and the berry sauce on top.

Cooking techniques: how do we prepare duck breast like in a restaurant?

Ingredient:

4 pieces of duck breast (112-140 grams)

1 tablespoon orange peel

Method of preparation:

Dab the duck breast with a paper towel. With the help of a sharp knife, easily increase the skin and fat of the duck breast, without cutting the meat.

Season the meat with salt (more on the skin side, less on the other side).

Put the duck breast pieces, skin down, in a cold pan. Put the pan on the stove over low heat. You can also use another pan to place it over, to slightly flatten the meat.

After 5 minutes, the fat on the duck will start to melt. Let the meat cook for about 15 minutes. If you have a meat thermometer, the required temperature inside the chest should reach about 52 degrees Celsius.

Turn on the heat and let the duck cook for another minute, to form a golden crust on the skin. Turn the duck breast over and let it cook for another 2 to 7 minutes, depending on how well done you want it to be. Remove the duck breast pieces from the pan and place them on a wooden chopper. You can turn the fat in the pan into a delicious sauce. Start by pouring white wine into the hot pan. With a wooden spoon, peel off the pieces of meat or fat left on the bottom of the pan. The technique of sous vide cooking, in short

Not long ago, this technique of cooking, sous vide (pronounced su vid), was reserved only for professionals. The technique itself uses precisely set temperatures, carefully controlled, to obtain constant results, as in large restaurants, using raw materials that, during cooking, are sealed in a perfectly vacuumed environment. Whip restaurants around the world have been using this technique for years, to get perfectly consistent results every time. The sous vide cooking technique leaves no room for error, every time we get extremely tender steaks, perfectly poached eggs, perfectly cooked fish, etc. Recently, the sous vide cooking technique has become increasingly popular among passionate amateurs, with the advent of highly accessible sous vide cooking appliances, such as those produced by Anova, Joule (sous-vide probes) or SousVide Supreme and others (bathrooms water for sous vide).

Sous vide, which in French means vacuum, evacuated, refers to the process of emptying and sealing the raw material in a special bag, then to be cooked in a water bath at a very precisely set temperature. The sous vide technique generates results impossible to obtain by other techniques.

Cooking sous vide is easier than you think, each time involving the following three simple steps:

1. Vacuum the food to be prepared, which may or may not be marinated / seasoned, but which is recommended to be brought to room temperature and sealed in food-grade plastic bags which do not change their structure at temperatures up to 80 degrees Celsius. they are found almost everywhere in trade.

2. Prepare the water bath or a simple pot, to which the sous vide probe is attached (in my case, I use such a probe, I chose it primarily because it is much easier to store and the water bath can to make it from any pot in the kitchen) and set the target temperature, which is much lower than the high temperatures we are used to cooking, thus guaranteeing a superior, younger texture of the finished product.

3. Cook the food by immersing the bag in the water bath for a certain period of time, which for some products can be 25 minutes, for others it can even reach 48 hours. At the end, the already delicately cooked sous vide product can be finished in the pan, on the grill or can be fried briefly in an oil bath, for a crispy crust.

Who are the ones who should try the sous vide cooking technique

Certainly the pretentious. Those who remember how juicy the steak was prepared two months ago and who want each one to be just as good. I am one of those who has been using this technique at home for more than two years, and I greatly appreciate the results, which I am sure I could not have obtained otherwise.

What are the dishes in which the sous vide technique gives the best results?

First of all, the meat. With this technique, you will get extremely juicy pieces, being able to set the desired cooking level with high precision. For example, I prefer a rare medium for beef, so I will get it every time, without having to waste my time watching and evaluating it, feeling it, during this time I can take care of the garnishes, sos etc.

Then the fish. You will get fine pieces of salmon like silk, tuna with the perfect interior, superb cooked halibut, etc.

Even for eggs, the sous vide technique gives very good results. For example, I put egg yolks in olive oil, a very delicate preparation, using the sous vide probe.

What equipment is needed to cook sous vide?

Cooking sous vide has become, as I said in the introduction, quite affordable. Things you really need:

  • a sous vide cooker with a water bath (which will take up more space) or a sous vide probe (which takes up as much space as a small twister) and a pot
  • a food vacuum cleaner that will be of great use not only to cook sous vide, but also to extend the shelf life of some products.
  • special plastic food bags for vacuuming

The two recommended devices, the sous vide probe and the vacuum device, have approximately equal prices, but all the nonsense is not nearly as expensive as some would think.

Step 1: The oven will be heated to 180 degrees

How to prepare a duck breast sandwich
