  • 75g soft cheese with garlic and herbs
  • 75g rindless goat's cheese
  • 1 tbsp crème fraîche
  • few drops of lemon juice
  • 5 fresh chives, snipped
  • 125g smoked trout
  • 2 tbsp chopped fresh basil
  • fresh chives to garnish

  1. Put the tomatoes in a bowl and pour over boiling water to cover. Leave for 10 seconds, then drain and cool under cold water. Peel off the skins using a sharp knife. Crush the soft cheese on a plate with a fork and roll each tomato in it (first wetting your hands slightly), covering them completely. Transfer to a plate lined with greaseproof paper.
  2. Carefully blend the goat's cheese with the crème fraîche, lemon juice and snipped chives. Lay the slices of trout out on the work surface and spread them with the cheese mixture. Roll them up, starting from the thinner end. Transfer these rolls to a plate and cover with cling film.
  3. Chill the tomatoes and trout rolls in the fridge for at least 3 hours to firm them up.
  4. Roll the tomatoes in the basil, then carefully cut them in half. Spear each tomato half with a cocktail stick. Return to the fridge until ready to serve.
  5. Cut the trout rolls into little pinwheels using a sharp knife. Spear each pinwheel with a cocktail stick and return these to the fridge also.
  6. Arrange the tomatoes and trout pinwheels on small serving plates and garnish with extra chives.

*You can use smoked salmon instead, but smoked trout is generally less expensive. *Any leftover cheese can be spread on canapés or added to a savoury sauce instead of cream.

What’s the big deal about this fried cheese? Most of the major fast-food chains and some Italian restaurants serve this addictive fried cheese sticks with marinara. You can also find the frozen ones in many grocery stores.

I am not sure if it’s an Italian dish or American. Whatever cuisine it may be, it’s very delicious. It’s hard to find eggless cheese bites in the restaurants, and I always wanted to recreate it at home without eggs, and finally, I did it.

Guess what, making restaurant-style food at home is not that complicated, and in fact, you can customize it according to your dietary restrictions and make it even better like these eggless cheese bites.

We love bite-size snacks. A few days back, I posted stuffed mushrooms which doesn’t need much oil. Also, I have an air-fryer baby corn recipe with less oil. But this one is a deep-fried snack with cheese. For once in a while indulgence, it is perfectly fine, and it is homemade with love. Nothing can beat that.

It’s not only kiddos’ favorite. We all, including our parents, love it. Seriously folks what not to love in this – cheese bites coated with flour and panko and deep-fried. Typically mozzarella cheese is used, but you can use cheddar cheese also. Make sure to adjust the salt when using cheddar cheese.

5 ounces dairy white chocolate with almonds, melted

5 ounces baking chocolate, melted

Instructions

Heat an oven-safe cast iron pan over medium heat. Pour in half and half and about half of the American cheese. Whisk to melt the cheese.

Next, mix in half of fontina cheese and stir.

Mix in the remaining American cheese and stir. Then mix in the remaining fontina cheese and stir. You’ll want to continuously stir to keep the cheese melting, smoothing out any chunks and keeping the bottom from burning.

I&rsquove seen similar recipes posted like this one. However, I like to up the flavor with pepperoni, double cheese, and black olive slices.

You can dress up these tasty little pizza bites however you like. Pick your favorite pizza toppings, just make sure they will fit on the small veggie slices.

If I don&rsquot have any homemade sugar free pizza sauce on hand, I just use fresh tomato slices. You can see that in my eggplant pizza rounds recipe.

We typically have tomatoes growing along with zucchini in the garden. So, using a small tomato slice on these zucchini pizza bites is perfect!

These mini pizzas also make great appetizers for your summer parties. You can prepare a bunch the day before and heat them up before serving.

My daughter does not like the zucchini skin. But, she eats these up when I peel the skin fist. And, they look more like regular mini pizzas without the green.

● For this recipe, I choose to use Heluva Good! Colby Jack, Heluva Good! Monterey Jack, Heluva Good! Munster, and Heluva Good! Jalapeno Jack (which tasted just like a Jalapeno popper!) The results were outstanding. We used half of each block, so the recipe is for one-pound of cheese. If you use more than a pound of Heluva Good! Cheese, adjust measurements accordingly.

● Use one set of tongs for each bowl (so three different tongs).

● These cheese bites need to be flash-frozen (about an hour). If you are making some to freeze later, right after they are flash frozen would be the time to foodsaver the cheese bites you plan to freeze to enjoy at a later date.

● Place 6 pieces of cubed cheese into the gluten-free flour (work in 6 piece increments). Toss to coat all sides thoroughly.

● Place gluten-free flour covered cheese cube into the milk/egg mixture. Coat all sides thoroughly.

● Place egg covered cheese cube into bread crumbs. Toss to cover all sides.
● Place bread crumb covered cheese cube back into the milk/egg mixture. Coat all sides thoroughly.

● Place cheese cube back into the bread crumbs. Cover all sides completely. (You are double coating, so the cheese does not ooze out onto the air fryer.)
● Place gluten-free cheese bite onto the wax covered baking sheet.
● Repeat until all the cheese cubes are coated on all sides.

● Place your cheese-bites-full baking sheet into the freezer for one hour (up to two hours).
● When cheese bites have been flash frozen, remove from freezer. Heat the air fryer to 350º.

● Spray the air fryer pan with non-stick spray.
● Add two tablespoons vegetable oil to the air fryer.
● Place the gluten-free cheese bites into the air fryer pan. Make certain they are not touching.
● Cook the gluten-free cheese bites for 5 minutes (you may want to check them and flip at 3-4 minutes).
