I first prepared the orange jelly to cool until I prepared the roll.
I squeezed 350 ml of orange juice.
I preferred it to be more sour, so I didn't add sugar.
You can add if you deem it necessary.
Pudding powder (or starch) is diluted with a little cold water.
I boiled the orange juice.
When it started to boil, I added the pudding and mixed it with the whisk until it thickened. I let it cool.
I then prepared the roll that will be in the middle.
I separated the egg yolks from the 4 eggs.
I mixed the yolks with the oil.
I whipped the egg whites with a pinch of salt.
When the foam became firm, I started to add a tablespoon of sugar, beating well after each one.
I then put the yolks with the oil over the egg white foam, mixing lightly with a spatula.
I also put the flavors.
I mixed the flour with the baking powder and put it over the egg whites, mixing with overturning movements so that the foam does not leave.
I put the composition in the tray on which I put baking paper and put it in the oven at 180 degrees for 15-20 minutes.
I took it out of the oven, overturned it on another baking paper and put it over a damp towel.
With the help of the paper and the towel I rolled the sheet, I wrapped it with the wet towel.
After 15 minutes, I took out the towel and left it for another 10 minutes with the paper.
I then unwrapped the sheet, greased it with orange jelly and rolled it again.
I then prepared the second roll sheet, the one with walnuts.
I mixed whole eggs with the sugar until they doubled in volume.
I then put the walnuts and flour in turn, mixing with a spatula.
I used the same baking tray.
This time I sprinkled a little starch on the paper, then I put the composition.
I also baked at 180 degrees for about 20 minutes.
I did the same to roll the sheet.
I then prepared the chocolate cream with which I filled the second sheet.
Chocolate broken into pieces, I put it on the steam bath with whipped cream.
You can also use milk if you do not have whipped cream.
When the chocolate melted, I let it cool.
I mixed the Mascarpone cream with the powdered sugar, then I added the cooled chocolate.
When it cooled, I unfolded the sheet, greased it with chocolate cream (I kept a part of the cream to put on top), then I wrapped it over the first roll.
I put the remaining chocolate cream on top.
I melted the milk chocolate on the steam with a little milk, then I put it on top.
I decorated it with chocolates.
Cut after leaving in the fridge for at least 2 hours.
