Gluten Free Bisquick


This weekend, I gave the new Gluten Free Bisquick Baking Mix a try. I do not personally avoid gluten, but I am lactose-free, so I'm always excited when big food corporations like General Mills start taking dietary considerations into, well, consideration.

Weekend pancakes have recently become a tradition in my home and if I don't have time for full-on homemade pancakes (our Whole Wheat Buttermilk Pancakes recipe is one of my all-time favorites), I usually reach for Bisquick's Heart Smart mix. So I figured the pancakes would be a great recipe to try out.

The recipe was, of course, incredibly easy and quick to mix up. For a little extra flavor, I added 1/2 teaspoon of vanilla extract and a few dashes of cinnamon.

I don't know what I was expecting, but I was pleasantly surprised how similarly the gluten-free pancakes cooked to the regular kind. Tiny bubbles and golden edges helped indicate when it was time to flip. Each pancake turned out fluffy and not too thick - just right! They tasted great, too. While they had a slight rice-y flavor, it definitely didn't bother me (the mix is made of rice flour after all). In the fall spirit, I served the pancakes with warm, delicious Sautéed Apples and about a tablespoon of maple syrup. Mmm!

Here's the recipe I used (and my alterations) from the back of the box:

Gluten Free Bisquick Pancakes

1 cup Bisquick Gluten Free mix
1 cup milk (I used dairy-free Almondmilk)
2 Tbsp vegetable oil (I used canola oil)
1 egg
(1/2 teaspoon vanilla extract)
(cinnamon, to taste)

- Stir ingredients until blended.
- Pour by slightly less than 1/4 cupfuls onto hot greased griddle.
- Cook until edges are dry. Turn; cook until golden.

Makes 10 pancakes.

1. There is no xanthan gum in it.

Xanthan gum is used as a stabilizer and helps the ingredients in gluten free baking all stick together so they don’t separate, which would result in a frustrating baking flop. So it gets tricky when leaving xanthan gum out of gluten free recipes. Because, well, you can’t just leave it out. There has to be some replacer used that mimics xanthan gum. Fortunately I have a whole list of them here.

I don’t include it with my gluten free bisquick mix because I prefer to add the substitute I want in each recipe.

2. I use a lot of baking powder.

Baking powder is kind of like a secret sauce for gluten free baking. There is nothing quite like it that produces the same results. Baking powder gives baked goods lift that they really need.

  • ¾ cup tapioca flour
  • 3 teaspoons xanthan gum
  • 3 tablespoons baking powder
  • 2 teaspoons salt
  • ¼ cup sugar
  • 1 cup shortening, butter, lard, or coconut oil
  1. Combine all ingredients in a food processor and pulse a few times until mixture is blended together until chunks are small pea sized.
  2. Depending on the size of your food processor you may need to do this in batches.
  3. You can also mix this with a pastry blender or using two forks, just be sure it is blended well.

Note: Store baking mix in an airtight container. If mix is made with butter or lard it should be store in an airtight container in the refrigerator.

In this gluten free journey I've created quite a few recipes over the years. One of the most popular on this site is my gluten free master baking mix. I revised the original recipe last year to create a healthier, whole-grain, soy-free, and dairy/casein-free version. Since then I've used it for countless recipes. dinner recipes. dessert recipes. snacks. you name it! It's so easy to use. It's much healthier than the Betty Crocker version, it's a more frugal option, and it's incredible easy to make.

Today I'm sharing the Revised Whole Grain Gluten Free Master Baking Mix recipe again, along with 5 additional SUPER easy recipes that you can make with the master baking mix.

Ginger Lemon Girl's Gluten Free/Casein Free
Master Baking Mix (Like Bisquick)
Free of gluten, dairy/casein, and soy

3 cups brown rice flour
2 cups sorghum flour -or- millet flour
1 1/2 cups arrowroot starch -or- tapioca starch
1/2 cup potato starch
1/4 cup brown rice protein powder -or- almond flour
1/4 cup ground flax seeds (optional - great for a whole grain texture & extra fiber!)
1 tablespoon + 1 teaspoon xanthan gum
2 teaspoons salt
3 tablespoons baking powder
1/2 cup coconut oil or spectrum palm shortening (I used spectrum)

Whisk all dry ingredients together thoroughly. Cut in shortening, until it is thoroughly mixed into the dry ingredients and looks like tiny peas. Store in a tightly-sealed container in fridge or pantry. Makes about 7 cups.

Half Recipe:
1 1/2 cups brown rice flour
1 cup sorghum flour -or- millet flour
3/4 cups arrowroot starch -or- tapioca starch

Whisk all dry ingredients together thoroughly. Cut in shortening, until it is thoroughly mixed into the dry ingredients and looks like tiny peas. Store in a tightly-sealed container in fridge or pantry. Makes about 3 1/2 cups.

1) Easy Muffins:
1 cup MASTER MIX
¼ cup sugar
⅓ cup milk
1 egg
1 tsp. vanilla
⅓ c. blueberries, chocolate chips, chopped apples, etc.

Mix all ingredients. Line muffin pan with cupcake liners. Fill ¾ full of batter. Bake 350 for 17-20 minutes until a toothpick inserted in the middle of muffin comes out clean. Makes 6 muffins.

2) Pancakes:
1 cup MASTER MIX
¾ cup - 1 cup milk (or non-dairy milk)
1 egg

Mix all ingredients together, you can add additional milk if necessary depending on how thick or thin you like your pancake batter. Grease pan (with butter, oil, or non-stick spray) and heat until droplets of water will sizzle. Pour about 2 tbsp. batter per pancake onto preheated hot skillet. Cook on med. high heat until bubbles form & pop on top of pancakes -or- until edges look dry. Flip cook an additional minute or so. Serve hot. Makes about 9 (2") pancakes.

3) Drop Biscuits:
1 ¼ cup MASTER MIX
3 tablespoons palm shortening, crisco, or butter
1 egg
2-4 tablespoons cold water

Cut shortening or butter into master mix until it looks like small peas. Stir in egg. Stir in1 tablespoon of water at a time until you have a stiff dough. (You may not need all 4 tablespoons of water.) Drop batter (2-3 tbsp. at a time) on greased baking sheet, each biscuit about 2” apart. Shape each biscuit into a circle. Bake at 350 for 10-15 minutes until golden brown. Place a pat of butter or margarine on top of each biscuit in the last few minutes of baking. My oven underheats, so things tend not to brown -- you may need to turn up your oven to BROIL for 2-3 minutes to brown the biscuits. DO NOT allow to broil for longer or they will burn. Makes 6 biscuits.

4) Basic Cookies:
2 ¾ cups MASTER MIX
½ cup palm shortening, crisco, or butter
¾ cup sugar
2 eggs
1 teaspoons vanilla
2-4 tablespoons water
ADD IN'S -- 1 cup of any of the following (or mix of the following): chocolate chips, chopped walnuts, chopped pecans, raisins, coconut flakes, macadamia nuts, rolled oats, chopped candied oranges, etc.

Cream sugar with shortening or butter. Add eggs and vanilla. Stir in master mix. If needed, add 2-4 tablespoons of water until you get a stiff (not crumbly) batter. Fold in any additional flavorings/spices/additions. Drop by tablespoons onto baking sheet. Flatten cookies slightly with the bottom of a glass or the palm of your hand, as they will not spread. Bake at 350 for 8-10 minutes. Makes about 2 dozen 1" cookies.

5) Impossible Cheeseburger Pie
1 lb. ground beef, ground turkey, or ground chicken
1 large onion, chopped (about 1 cup)
1 cup shredded cheddar cheese (dairy free version -- shredded daiya vegan cheese)
1/2 teaspoon salt
1/2 cup MASTER MIX
1 cup milk (or non-dairy milk)
2 eggs

Preheat oven to 350 degrees. Grease a 9" pie pan or a large baking dish. In a large skillet brown ground beef and chopped onions. Spread browned ground beef & cooked onions in the greased baking dish. Sprinkle ground beef with cheese or daiya vegan alternative. In a small bowl mix together the salt, master mix, milk, and eggs. Pour over the ground beef & cheese. Bake for 25 minutes until golden brown and/or until a knife inserted in the middle comes out clean. Allow to cool 5 minutes before serving. Makes 8 slices. Serve each slice with the option of being topped with mustard, ketchup, chopped tomatoes, and dill pickles!


The mix-in options

There are quite a few gluten free muffin recipes here on the blog. But none of them is a truly “basic” gluten free muffin recipe like this one (which is adapted from the mix-in muffin mix recipe my second cookbook, Gluten Free on a Shoestring Quick and Easy).

This basic mix-in muffin recipe, though, isn’t the only gluten free muffin recipe you’ll ever need. It’s perfect for mix-ins that hold their shape and don’t add moisture, like chocolate chips or miniature dried fruit like raisins.

This isn’t the right recipe for adding fresh (or frozen) blueberries. For that, you’ll need my bakery-style gluten free blueberry muffin recipe. Blueberries burst in the oven and add moisture to the surrounding batter. Chocolate chips don’t!

This is the perfect recipe if you’d like a “plain” muffin, a chocolate chip muffin, or a muffin with pistachio or other chopped nuts mixed in. It’s also perfect if you’d like to keep the batter plain, but add a crumble on top. Oh, a crumble topping is just the best, isn’t it?


Gluten Free Impossibly Easy Breakfast Bake

Breakfast recipes don't get much easier than this Gluten Free Impossibly Easy Breakfast Bake. It doesn't even matter that it's gluten-free, because you won't notice! Bisquick recipes like this are always a hit and this one's perfect for brunch or even dinner. When you're cooking for people who don't eat gluten and people who do, it's nice to be able to make one dish that they'll both enjoy. This is that dish.

Quick Tip: Frozen hash brown potatoes are great to have on hand for easy dishes like this.

Ingredients

  • 1 package (16-ounce) bulk pork sausage
  • 1 medium red bell pepper, chopped
  • 1 medium onion, chopped (about 1 cup)
  • 3 cups frozen hash brown potatoes
  • 2 cups shredded Cheddar cheese (about 8-ounces)
  • 3 / 4 cup Bisquick Gluten Free mix
  • 1 / 4 teaspoon pepper
  • 2 cups milk
  • 6 eggs

Instructions

  1. Preheat oven to 400 degrees F.
  2. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook sausage, bell pepper and onion over medium heat, stirring occasionally, until sausage is no longer pink drain. In baking dish, mix sausage mixture, potatoes and 1 1&frasl2 cups of the cheese.
  3. In medium bowl, stir Bisquick mix, pepper, milk and eggs with whisk or fork until blended. Pour over sausage mixture in baking dish.
  4. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1&frasl2 cup cheese bake about 3 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

Oh I do love Impossibly Easy recipes, lol! This one is a tasty and filling bake that really is easy to make and that everyone will enjoy. I made 2 changes I added some crushed fresh garlic (just because I could, lol) and I had to improvise a bit because Bisquick is not available in South Africa. Other than that it really was very easy to make and definitely worth making again.

I am not really sure where all these comments about this being unhealthy are coming from. People do need fat in their diet. This looks great to me. I sometimes make a skillet dish like this without the bisquik and my daughter is not a fan because of the eggs with the potatoes so maybe she would like this. I am going to try it.

This was easy and great. lt is nice when everything goes into one pan. I am thinking I will put this together for family during the holidays. I think it would make the morning run a little easier and more time to enjoy each other. It may be easier enough the kids can do it. Now there is a thought

Has anyone tried freezing this? Janet

I have had breakfast bakes before made with Bisquick and just love them! I have been looking for a recipe like this but without the hash brown as i need to lose weight and know I can with some adjustments like using egg beaters and low fat cheese and as much as i love them (no hash browns) I still enjoy them a lot. I just can't seem to find a recipe for one as they all seem to require hash browns. I don't need to have the meat either. Any one out there with a recipe for a breakfast bake with no potato's I sure would like to have it. Thanks! michele

Good and easy. As to the comment about healthy you can make it better. Jimmy Dean has a reduced fat pork sausage. There is low fat or fat free cheese that tastes okay and what about egg beaters in place of the real thing. Cant tell the difference there at all. Even Bisquik has a lower fat version. Try not to be so negative when you have not even tried this recipe.

10) Changes to Agreement. We reserve the right to change any of the terms of this Agreement or any Specifications or Guidelines governing the Service at any time in our sole discretion. Sharing Your Own Images

You! Anyone who is a registered and logged in user.

Please share images that will help other visitors. For example:

What image formats and sizes are supported?

We support JPEG, GIF and PNG images. Files must be no more than 1MB. Both the image height and the image width must be between 60 and 3500 pixels.

Instead of uploading an image, can I just enter a link to an image?

No, all images must be uploaded to Prime Publishing. This ensures your image is always available.

How long does it take to upload an image?

The time varies depending on the speed of your Internet connection and the size of the image file. For a 400KB image, for example, you should expect 2 to 4 minutes over a 56KB modem and under 1 minute for DSL or cable modem.

Where will my image appear?

Generally your image will appear where you uploaded it: in the article image gallery.

Who owns the images I upload?

The rights owner of the image continues to own the image uploading your image to Prime Publishing does not transfer ownership.


Here are some tips for making the best 4 ingredient gluten free bisquick biscuits ever:

Tip 1 – Get the oven heated up first

Because these biscuits are quick and easy to make, the odds are that the biscuits will be ready before your oven is. Start getting the oven heated up asap so it is ready and waiting for these biscuits.

Tip 2 – Use cold butter and cold milk

Biscuit recipes are not the norm when it comes to temperature of ingredients in baking. Usually room temperature is the way to go so the resulting batter is light and fluffy. But biscuit batter is different. It should be more dough like and having cold butter and milk helps keep the butter from melting before the biscuit even hits the oven.

Tip 3 – No need for a rolling pin

Reason number 563 why I love this recipe…no need for rolling out the dough! Once the dough is fully combined, it should be easy to work with. Just flop it on your work surface and pat it out into a circle. The dough should be about 1 inch thick. And then just cut with a biscuit cutter.

Tip 4 – Work quickly

Warm butter spells disaster for biscuits. So working quickly with the dough is essential. Get the butter and milk mixed in and get those biscuits into the oven. Otherwise they start to melt and spread and that is not a good biscuit.

Tip 5 – Don’t double the recipe, make two batches

I’m being bold here, but you will probably want 10 biscuits and not just 5. Although it may seem like a time saver to just double the recipe, don’t.

Just use 2 bowls and make 2 batches, side by side.
