  1. Whisk the eggs and milk together in a large bowl. Add flour, sugar, baking powder and salt; mix well.
  2. Add the melted butter and mix again. The pancake batter will be quite thick.
  3. Heat a non-stick pan over medium heat. Add a scoop of pancake batter to the pan - it will spread out into a pancake. Once small holes appear on top of the fried pancake, turn it over and fry on the other side.
  4. Repeat with remaining batter, stacking the cooked pancakes as you go.

    1. Separate eggs. Mix egg yolks with flour, baking powder and milk until you get a smooth and thick batter. Whisk egg whites until they peak and carefully fold into batter. Heat a pan and pour a tiny amount of oil into it. Pour some of the batter into the pan (to get little fat pancakes) and fry for about two minutes on one side (until its bubbly on top). Flip the pancake over and cook until golden. Serve with topping of choice (chocolate sauce, maple syrup, bacon, vanilla icecream etc).
