Un-Cobb Salad

Like chicken caesar, Cobb salad is one of those standard salads that you can find on practically any American restaurant menu.

It’s a “composed” salad with avocados, bacon, chicken, hard boiled eggs, and tomatoes.

The only problem is that sometimes, just sometimes, you want something a little lighter. Perhaps you had bacon and eggs for breakfast, and you don’t feel like having more at lunch.

This was the dilemma we found ourselves in during a recent trip to Washington DC, wanting a substantial salad for an evening meal, but without all that bacon.

We found a great solution at the Hard Rock Cafe in D.C., in the form of their “Anti-Cobb” salad. Instead of bacon, eggs, and tomato, the Hard Rock salad included mango, apple slices, and dried cranberries.

Perfect!

The following recipe is based on that salad, and is more of a guideline than a precise recipe. I haven’t given any amounts, because it really depends on how much you want to make, and how much of any one of the ingredients you might want in the salad.

Un-Cobb Salad Recipe

Ingredients

  • Romaine lettuce, chopped cross-wise in 1-inch strips (or favorite salad greens)
  • Grilled skinless, boneless chicken breast, chopped
  • Mango, peeled and chopped (see how to cut a mango)
  • Avocado, seeded, peeled, chopped (see how to cut and peel an avocado)
  • Tart apple, peeled and sliced
  • Dried cranberries
  • Vinaigrette or your favorite salad dressing

The Hard Rock Cafe "anti-cobb" salad also has strawberries and supremed orange segments.

Method

Arrange lettuce on a serving platter. Arrange other ingredients in sections on top of the lettuce. Drizzle on salad dressing of choice.

1 Soft Avocado
dash of fresh herbs (cilantro, parsley, etc.), chopped
1 small clove crushed garlic (optional)
2 TBSP EVOO
1 TBSP Aged Balsamic Vinegar
1 TBSP Red Wine Vinegar
1/2 cup Orange or Lemon Juice
dash of Salt
dash of Pepper

Place all ingredients into a blender or food processor and puree until smooth. Store dressing in the refrigerator. Add to salads as desired. Use the dressing within 3 days for best flavor.


Ingredients

  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 medium garlic clove, grated (½ tsp.)
  • ½ teaspoon honey
  • ½ teaspoon kosher salt
  • 6 tablespoons olive oil
  • 6 cups packed chopped romaine lettuce (from 2 [8-oz.] lettuce hearts)
  • 3 hard-cooked eggs, quartered lengthwise
  • 4 ounces blue cheese, crumbled (about 1 cup)
  • 1 medium avocado, chopped (¾ cup)
  • 4 thick-cut bacon slices, cooked and chopped (about ½ cup)
  • ½ cup drained and rinsed canned black-eyed peas
  • Cornbread Croutons

Whisk together red wine vinegar, mustard, garlic, honey, and salt in a small bowl. Gradually whisk in olive oil until completely combined, about 30 seconds set aside.

Toss together lettuce and ⅓ cup vinaigrette in a large bowl. Transfer mixture to a platter top with cornbread croutons, eggs, cheese, avocado, bacon, and peas. Drizzle salad with remaining ⅓ cup dressing.

Un-Cobb Salad - Recipes


Cobb salad is a main-dish American garden salad consisting of chopped chicken (or turkey), salad greens, usually iceberg and romaine lettuce, watercress, endives with tomatoes, crisp basin, hard boiled eggs, avocado. Add-ins are often Blue cheese or Roquefort cheese or even Cheddar cheese. And it's topped with a vinaigrette dressing. An easy way to remember the ingredients list is to use the mnemonic EAT COBB: egg, avocado, tomato, chicken onion, bacon, blue cheese.

Its origin is the Hollywood Derby Restaurant in 1937. All online sources seem to agree that it's named after Derby owner, Robert Cobb. The most popular version of its creation is that Cobb had not eaten when late one night he raided the restaurant kitchen and mixed together leftovers, adding cooked bacon from a chef and tossing it all with French dressing. S howman and theater owner Sid Grauman (think Grauman's Chinese Restaurant) was reportedly with him. Salad ingredients were chopped fine because Grauman,who had recent dental work, couldn't chew. Afterwards, Grauman was said to have requested the salad which was then added to the menu. It became a popular item and developed a following among popular movie stars of the time.

When you visit Disney&rsquos Hollywood Studios, there is a Brown Derby restaurant in the park. It is exactly like the legendary Brown Derby in California. Of course, the signature dishes from The Brown Derby has to be on Disney&rsquos menu.

1937 at the Hollywood Brown Derby restaurant, where it became a signature dish. It was named after the restaurant&rsquos owner, Robert Howard Cobb. The legend is that Cobb had not eaten until near midnight, and so he mixed together leftovers he found in the kitchen, along with some bacon cooked by the line cook, and tossed it with their French dressing.

Chicken Salad Recipe

The best Classic Chicken Salad recipe is flavorful with simple ingredients. Chicken, celery, mayonnaise, green onions, and a little lemon juice make this salad taste like heaven. Ingredients

  • 3 cups cooked chicken, diced (I like to use rotisserie chicken)
  • 1/2 cup mayonnaise
  • 1/2 cup finely chopped celery
  • 1/3 cup sliced green onions
  • 2 teaspoons lemon juice
  • 1/2 teaspoon kosher salt (more to taste)

Instructions

Add all the ingredients to a bowl and combine well. The salt will need about 30 minutes to dissolve. Add more salt if needed and add pepper to taste. Chill in the fridge until ready to serve.

Serve on sliced bread or croissants. For a low-carb version serve as lettuce wraps or all alone.

Chicken Salad is a blank canvas for whatever you want to add in. You can add nuts, fruit, seasonings, or fresh herbs. I love this version of chicken salad plain but you can add in to suit your taste.

  • NUTS - Cashews, sliced almonds, pecans, or walnuts would be a great addition to this salad.
  • FRUIT - Common fruits to add in are sliced grapes, dried cranberries, or diced apples.
  • SEASONINGS - You can add onion powder, garlic powder, Worchestershire, or Season All.
  • FRESH HERBS - Some chopped fresh parsley or dill would be a great addition.

Simple, but yummy! Will definitely make again.

I just discovered your site … I’ve been looking for a tasteful chicken salad recipe with the right ratio of ingredients for a while. After many years and contenders, yours is truly the winner, Christy! It was delicious and perfect on a Zingernan’s (Michigan company) croissant. As a teacher, I no longer go to the staff lunchroom due to social distancing requirements so having a lunch to look forward to tomorrow when eating alone (after 23 years of past comaraderie) is a big deal! I used Green peppers instead of celery and Red onion instead of green onions. Both being finely chopped.

From the time I was about ten years old my girlfriends and I would take the bus to downtown Ft. Lauderdale every Saturday to go to the movies, window shop, or explore the town and have lunch. We always went to Walgreens. They had a lunch counter in those days (early 60’s). I always ordered their chicken salad on white toast. It was super simple, (chicken, mayo and celery). Delicious! They served it with a really sour dill pickle spear (like Claussen) and potato chips. Heaven! When I finally learned to cook I was able to duplicate their simple recipe (duh!). I have in recent years added a very small amount of green onion. A few years back I was thinking about club sandwiches, but who needs a third slice of toast? Anyway I got the flavor by adding a couple of slices of crisp bacon. Boy is it ever yummy! Best almost club sandwich you’ll ever have.
