For a while I became a big fan of beets, so I try to include it in various recipes such as this recipe for potato borscht with beets and smoked ribs.

- 4 potatoes
- 1 kg smoked ribs
- 1 bell pepper, red
- 1 carrot
- 1 parsnip
- 2 onions
- 750 ml borscht
- 2 l water
- 1 bunch green parsley

RECIPE PREPARATION Potato borscht with beetroot and smoked ribs:
Wash the beets well and boil them in water until they are covered. We portion the rib, wash it well in warm water and boil it in 2 l of water. In another bowl, boil the borscht. We clean the onion, chop it into scales, and the carrot and parsnip, we clean them and put them on the grater. When the rib is slightly penetrated, add over it, first the onion, then, after 7-8 minutes and the roots given on the grater. After another 7-8 minutes of boiling, peel the potatoes and chop them into cubes. Meanwhile, peel the boiled beets and chop them into cubes. Add it to the rest of the ingredients on the fire. Add the diced chopped pepper and boiled borscht for about 20-30 minutes. Let the soup boil for about 10 minutes, let the flavors blend. After turning off the heat, add the chopped green parsley. It is served simply, with cream, with hot peppers, or as everyone prefers. It is very tasty in any variant.
