What we like most is that the dough comes out soft, not hard and crumbly and is ready quickly, in about an hour from the moment I roll up my sleeves until we sit down to eat. It's a simple recipe, which Mark helps me with most of the time, either by spreading the dough or (eating) the topping.
The dough recipe is taken from Gianina Staicu-Avram's book (Jamila), and we always put other ingredients, as we feel like. Mix 300 g of white flour with a pinch of salt and 5 g of yeast. Add 180 ml of water and 2 tablespoons of olive oil, a little dried oregano and knead well. Then let the dough rise for at least half an hour.
Meanwhile, prepare the ingredients for the top: grate the mozzarella, cut the mushrooms, olives and whatever else you want to put over the dough. When we say pizza, we automatically think about the long preparation time and no matter how much we like it, it seems that we rather choose to buy it. Well, for today's mini pizza recipe, we need a maximum of 10 minutes to prepare and just a few ingredients for the counter.
Of course, the topping is another story, there we can give free rein to the imagination, but the top contains only Greek yogurt, flour, salt and baking powder. So, after kneading it, we don't have to wait for it to leaven. We spread it, cut it, place the yogurt pizza in the tray, add the topping and quickly in the oven.
