I didn't think that the ordinary potato could impress us with anything. But baked potatoes can have an appetizing and completely new face if you learn to cook them in Swedish style.

In international recipes I found them by name Hasselback potatoes. They borrowed his name from the Hasselbacken restaurant in Stockholm where they were first served in this form of event or accordion.

The model was quickly turned around and adapted by other famous restaurants and chefs. I also found the hasselback potatoes in the menu of Nigella Lawson, but also of culinary bloggers from all over the world.

Their recipe is extremely simple, although the appearance seems extremely complicated. For a portion of accordion potatoes you will not work more than for a tray with baked sliced ​​potatoes. All you need is a sharp knife and a little patience.

Traditionally, pieces of butter, salt and pepper are put in the slits created by slicing the potato, but depending on your taste and desires, you can also put slices of cheese or other cheeses, garlic or onion, aromatic herbs. The important thing is that at the end you will be able to present on the table a good-looking garnish, with an almost crispy coating like french fries, with a soft medium like a puree, but which, in essence, is just a disguised baked potato.

How to make baked potatoes & ldquoacordeon & rdquo?

  • 4 large potatoes
  • 4 tablespoons melted butter (or olive oil or duck fat or coconut oil)
  • salt and pepper
  • Optional: finely chopped herbs, spices, grated baranza, breadcrumbs

Preheat the oven to 220C and place the grill in the lower half. Wash with a sponge and dry the potatoes well. You can peel them if you want or you can leave them like that.

Slice the potatoes without pressing the knife blade all the way down, so that the base remains intact and maintains the slices.

Remove the slices a few millimeters apart. Keep the knife perpendicular to the potato, to make it easier to make slices equal in thickness.

Arrange the potatoes in a baking dish or tray. Grease the potatoes well with half the butter (or the fat you have chosen to use). Season with salt and pepper.

Bake the potatoes for 30 minutes, during which time the thin slices will open slowly like a fan. Take them out of the oven and grease them with the rest of the butter.

Put the potatoes back in the oven for 30-40 minutes. If you want to add cheese, herbs or other ingredients, now is the time. Put what you want 5-10 minutes before removing the potatoes from the oven.

Serve the potatoes immediately.
