Ingredients

Poached Chicken

  • 2 pounds skinless, boneless chicken breasts
  • 5 tablespoons kosher salt, divided
  • 1 2-inch piece ginger, peeled, sliced
  • 2 scallions, trimmed, cut into thirds, smashed with the back of a knife

Numbing Vinaigrette

  • 1 1/2 teaspoons cumin seeds
  • 1 1/2 teaspoons fennel seeds
  • 1 1/2 teaspoons Sichuan peppercorns
  • 2 scallions, thinly sliced
  • 1/2 cup finely chopped peeled ginger (from two 4x1-inch pieces)
  • 1 1/2 teaspoons (packed) light brown sugar
  • 1/4 cup finely chopped garlic
  • 3 tablespoons chinkiang (black) vinegar
  • 1 tablespoon fish sauce (such as nuoc nam or nam pla)

Assembly

  • 1 head iceberg or romaine lettuce, torn into pieces
  • 2 cups (packed) fresh cilantro leaves with tender stems

Recipe Preparation

Poached Chicken

  • Season chicken with 2 Tbsp. salt; let stand for 15 minutes. Bring remaining 3 Tbsp. salt, ginger, scallions, and 4 quarts water to a boil in a large pot; add chicken. Reduce heat to medium-low; simmer for 8 minutes. Remove from heat; let stand for 20 minutes. DO AHEAD: Can be made 1 day ahead. Transfer chicken to a medium bowl. Add poaching liquid to cover by 1". Cover and chill chicken. Reserve 1/2 cup poaching liquid.

Numbing Vinaigrette

  • Heat chili oil in a medium skillet over medium heat. Add cumin, fennel, and peppercorns; fry, stirring often, until fragrant, 1–2 minutes. Add scallions, chiles, ginger, and sugar; cook, stirring often, until fragrant, about 2 minutes. Stir in reserved 1/2 cup liquid from poached chicken, soy sauce, garlic, vinegar, and fish sauce. Transfer to a small bowl and let cool. Cover and chill.

Assembly

  • Remove chicken from poaching liquid. Thinly slice. Toss lettuce, sprouts, and cilantro in a large bowl to combine. Divide among plates. Arrange sliced chicken over. Drizzle with numbing vinaigrette.

How To Make This Recipe

Start by seasoning 4 chicken breasts or cutlets with homemade seasoned salt and pepper then saute until golden brown on the bottom.

Spring Bliss Bowls with Pesto Rice

Flip the chicken then continue sauting for 1-3 minutes, depending on if you’re using cutlets or breasts (detailed timing instructions are in the recipe card below) and then start adding all the traditional toppings: 2-3 Tablespoons sauerkraut followed by the same amount of homemade Thousand Island dressing. Russian dressing is typically used to make Reubens but my Mom always used Thousand Island growing up. You can use either!

For the Thousand Island dressing, combine mayonnaise (I used vegan mayo,) ketchup, vinegar, minced dill pickles and white onion, plus a pinch of sugar and a drizzle of pickle juice. That’s it! You can make the dressing ahead of time to get this quick-cooking dish on the table even faster.

Here’s the kruat I used too. It’s raw, and crunchy, and sour, and I ate half of it with a fork straight outta the bag the first time I bought it. YOLO.

Last step is to add a slice of swiss cheese to the tops then place a lid on the skillet and continue to saute until the cheese melts.

Scoop the chicken onto plates then serve with a fresh side salad or roasted vegetables – I’m thinking roasted asparagus would be absolutely divine next door. However you serve it up, I hope you love this tasty twist on a classic reuben – enjoy!

Everybody can relate to the existential dread that is associated with trying to decide how to cook chicken. You either don’t have the time or patience to wait for some intricate marinade to do its job, you can’t bare the thought of another plain rotisserie chicken, you don’t have any exciting ingredients at home to liven up the dish, or you’ve had it up to your eyeballs with your monotonous, baked chicken breasts. Enough is enough, people. Today is the day that you say no to boring chicken dinners and you stop settling for subpar poultry. You achieve this by making soda can chicken.

Inspired by a classic beer can chicken, this easy, creative method is the ultimate way to liven up your next bird. In the same way that you cannot actually taste a potent beer presence in your beer can chicken, you cannot taste a strong flavor of sugary soda in your soda can chicken. That being said, by propping up the whole chicken on top of an open soda can and roasting it atop your grill, the flavors from the soda gently permeate the flesh of your chicken, thus making for a super moist and tasty final product. This method is essentially roasting a chicken, and it just happens to take place on your grill, instead of in the oven. The chicken is strategically cooked on the unlit side of the grill while the lid is closed, thus creating an oven-like experience for the chicken, without losing that signature fiery, smoky goodness that comes with grilling.

Because chicken dinners have a way of quickly exhausting themselves after one or two go-arounds, we drew up three dry rub and soda pairings, so that there are plenty of flavor options to play around with, depending on what you’re in the mood for. For all versions, the dry rub is the real key to your final flavor profile. The entire outside of the bird, as well as the cavity, should be heavily seasoned—this is where the magic happens, so don’t be shy.

In the first iteration of the soda can chicken, we’ve partnered a ginger ale with an Asian dry rub. The aromatic spicy notes from the ginger ale against the dried mint and basil in the rub make for an all-around flavorful, Asian-inspired poultry dish. For a more Southern-inspired route, we’ve fused the sweetness of a cherry cola soda with a smoky sweet BBQ rub. Finally, we’ve harnessed the citrusy greatness of a Mountain Dew (although any lemon-lime soda will suffice) and paired it with a rosemary, lemon, and garlic rub. If your soda preferences lie elsewhere, be attentive to those desires and pursue them. As long as it’s sweet and bubbly, it’s sure to provide just the “umph” factor that your chicken dinner needs. Your run-of-the-mill, salt & pepper roasted chicken just got a serious makeover. There’s no looking back, now.

Chinese Mouthwatering Chicken

This is a very famous Chinese spicy dish. You can change the amount of spice in it to adjust to your taste.

Ingredients

  • FOR THE CHICKEN:
  • 5 pieces Bone In Chicken Thighs
  • 4 slices Fresh Ginger (small Medallions)
  • 1 Tablespoon Rice Cooking Wine
  • FOR THE CHILI OIL:
  • 3 Tablespoons Red Chili Powder
  • 1 Tablespoon White Sesame Seeds
  • 1 teaspoon Sugar
  • ¼ teaspoons Salt
  • 1 cup Vegetable Oil
  • ½ Tablespoons Sichuan Peppercorns
  • 1 whole Clove
  • 1 whole Cinnamon Stick
  • ½ teaspoons Cumin
  • 1 whole Star Anise
  • 1 leaf Bay Leaf
  • 4 pieces Sliced Ginger
  • 1 clove Garlic Sliced Into 4 Small Pieces
  • 1 spear Green Onion Sliced Half
  • FOR THE ASSEMBLY:
  • 4 Tablespoons Just Made Chili Oil
  • 1 Tablespoon Sesame Oil
  • ½ Tablespoons Sugar
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Vinegar

Preparation

1. Debone chicken thighs using scissors.

2. Put chicken thighs into a big pot of cold water, add cooking wine and 4 slices of ginger. Boil the water. Once it reaches a boil turn off the heat and leave the thighs inside for 8 minutes.

3. Remove the chicken from the pot and put it into a bowl of ice water to cool. Refrigerate chicken if you are going to let the chili oil sit overnight.

4. Prepare chili oil. Mix red chili powder, white sesame seeds, sugar and salt in a heatproof container. Set aside.

5. Put the vegetable oil into a saucepan. Add 1/2 tablespoon Sichuan pepper, 1 clove, 1 cinnamon stick, 1/2 teaspoon cumin, 1 star anise, 1 bay leaf, 4 slices of ginger, the sliced clove of garlic and sliced green onion into the vegetable oil. Turn on fire between medium and low heat and heat until garlic, green onion and ginger turn golden brown.

6. Take out garlic, green onion and ginger with chopsticks or anything your are comfortable with and continue heating the oil until it’s hot and wavy, takes about 5 minutes.

7. Filter the heated oil through a sieve into the red pepper mixture in step 4, a little at a time. Take about 3 times to do this. Do not pour it in all at once. Finally stir the mixture, preferably leave it overnight, so the taste of the red chili oil is more fragrant.

8. To prepare the dish: In a medium-sized bowl mix 4 tablespoons of chili oil made above, with 1 tablespoon of sesame oil, 1/2 tablespoon of sugar, 2 tablespoons of soy sauce and 1 tablespoon of white vinegar. That is the mouthwatering chicken sauce.

9. Slice the chicken thighs into pieces, skin side up, put into a large size plate and drip the sauce over it. That’s the mouthwatering chicken. It is a cold dish, by the way.
