In a bowl, beat the egg whites with a pinch of salt. Add the ground sugar and mix until you get a glossy meringue.
Chop the walnuts with a blender and incorporate them with a spatula into the egg white foam.
Line the baking tray with baking paper and pour the composition and level it. Bake the top in the preheated oven for 25-30 minutes.
Put the gelatin hydrated in 30 ml of cold water. Mix the yolks with the ground sugar. Put the milk in a saucepan over low heat, leave it until it warms up slightly. Pour the lukewarm mixture over the egg cream with sugar and put again on low heat. Stir with a whisk until it thickens a little. Add the broken chocolate in the smallest pieces and mix until it melts completely. Allow the composition to cool.
Add the dissolved gelatin to the steam bath and mix gently. Allow the cream to cool completely.
Put the gelatin hydrated in 30 ml of cold water. Add the vanilla essence and mix with a whisk until the composition thickens. After it has thickened, take the pan off the heat and let the cream cool. Add the dissolved gelatin to the steam bath and mix gently. Allow the cream to cool completely.
Mix the cream with the liquid cream until you get a strong cream. Add half over the chocolate cream and add the rest over the vanilla cream.
Cut the countertop sheet in half, obtaining 2 sheets of the same size. If you have a sheet-sized tray, place baking paper or cling film on it and assemble the cake there. Put the first countertop and pour the chocolate cream and level. Cover with the second sheet of worktop, pour the vanilla cream and place the tray in the fridge.
Meanwhile, prepare the strawberry jelly.
In a saucepan, put the sugar, the strawberries cut into 4 and the water. Crush the strawberries with a fork. Simmer and froth when needed. When the mixture turns into a more liquid substance, take the pan off the heat and pass the mixture through a sieve. Let cool.
Hydrate the gelatin in 50 ml of cold water, according to the instructions on the package. Dissolve the gelatin on a steam bath, and then pour it over the jelly. Allow to cool and pour the jelly over the vanilla cream.
Leave in the fridge until the next day.
Cheesecake with strawberry jelly (without baking)
Cheesecake recipe with strawberry jelly. It is a cheesecake without baking, and the fruits remain at everyone's choice. I used strawberries, but it can also be made with other fruits, such as: kiwi, apricots, berries, raspberries, etc. The cheesecake recipe without baking seemed to me a very good idea for anyone to have the courage to make something sweet, delicious and at the same time spectacular. Preparation is quick and easy.
I prepared the cheesecake top from a mixture of well-ground cocoa biscuits, melted butter and ground walnuts. Depending on your preference, you can choose other types of cookies.
I prepared the cream from cream cheese, liquid cream and sugar, with the addition of gelatin to strengthen the cream in the refrigerator. The recipe for cheesecake without baking is the star of these homemade desserts.
- The base:
- 100 g biscuits with cocoa
- 100 g ground walnuts
- 120 g butter
- 800 g cream cheese
- 9 tablespoons powdered sugar
- 2 teaspoons vanilla extract
- 400 ml liquid cream for whipped cream with at least 30% fat
- 70 ml of hot water
- 2 teaspoons gelatin granules
- 400 ml of boiling water
- 2 sachets of gelatin
Melt the butter in a bain-marie.
Mix the butter together with the walnuts and the ground biscuits.
Line a round tray with removable edges and a diameter of about 23 cm with baking paper.
Evenly distribute the composition based on the tray.
Level on the surface and refrigerate while you prepare the cream.
Dissolve the celatin in a little cold water, then mix with hot water.
Separately, mix the liquid cream with the powdered sugar.
Add the vanilla extract and gradually incorporate the cream cheese, spoon by spoon.
Put gelatin and mix well.
Distribute half of the cream evenly in the pan.
Place strawberries from place to place, and spread the rest of the cream cheese over it.
For the jelly, put the gelatin dissolved in cold water for 10 minutes.
Then mix with hot water.
Place a layer of strawberries over the cream cheese and pour the mixture with the gelatin, which should not be very hot.
Refrigerate the cake for at least 2-3 hours or even overnight.
Rate Cheesecake with Strawberry Jelly (no baking)

Method of preparation:Countertop preparation: Whisk the egg whites with the powdered sugar, then add the ground walnuts, the yolks rubbed with salt, the flour in the rain, the baking powder and the vanilla sugar.
