Combine ground beef and jerk seasoning in large bowl, mixing lightly but thoroughly. Shape into four 3/4-inch-thick patties.

Place patties on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (or over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. Season with salt, as desired.

When I see mango salsa on restaurant menus, it’s usually paired with dishes like shrimp, chicken, salmon, or fish tacos.

But as a vegetarian, my favorite way to eat it is to add black beans and stuff it into a roasted sweet potato (here’s the best way how to cook sweet potatoes).

The salsa is also great stirred into rice or quinoa, served as an appetizer with chips, mixed into a salad or grain bowl, wrapped with refried beans or hummus into a burrito, or served as a healthy and colorful side dish to complement pretty much any main course.

It’s a wonderful accompaniment to breakfast scrambles (fruit salsa > fruit salad!).

And of course it’s particularly good with tacos – perhaps Buffalo Cauliflower Wing tacos??

Want Spicy Salsa? Add either a dash of hot sauce or diced habanero or serrano peppers.

I’ve been in love with mangoes ever since living in the Philippines for a little while in high school.

It was there that I tried my first Carabao or Manila mango (the small yellow mangoes, similar to the Mexican Ataulfo or honey mango), known as the sweetest mangoes in the world.

For this salsa recipe, you can use any variety of mango, including the more reddish Haden or Tommy Atkins mango or green Keitt mangoes. Apparently there are a lot of different types of mangoes!

How To Make Mango Salsa

Start with ripe mangoes – you can check for ripeness by pressing the fruit very gently. It should yield slightly to pressure and feel soft but not overly mushy.

Get out a big bowl and chop all of your ingredients. You can chop them as large or small as you wish.

Add everything into the bowl and stir.

Taste, then add more lime or even a dash of ginger or garlic powder if desired. I also like to add up to 1/4 tsp salt, because a little bit of salt brings out sweetness.

Cover any leftovers, and refrigerate for up to four days.

I threw in a handful of everything – there’s really no need to measure with this recipe.

Then I added chopped red pepper at the very end because I wanted to give it more color… also possibly because I ate so much of the mango that the bowl was suddenly looking pretty empty!

For a tropical or Hawaiian mango salsa like the one from Trader Joes, just replace some or all of the mango with diced pineapple instead.

Helpful Mango Tips

In order to make Mango Salsa, here is some helpful information including how to select, store and cut mangos.

TO CHECK IF A MANGO IS RIPE:

  • To check for mango ripeness, focus on FEEL not color because every variety is a different color when ripe. For example, red doesn’t necessarily mean ripe.
  • Squeeze gently to judge ripeness. A ripe mango will give slightly, indicating soft flesh inside.
  • Use your experience with produce such as peaches or avocados, which also become softer as they ripen.
  • Ripe mangos will sometimes have a fruity aroma at their stem ends.

HOW TO RIPEN MANGOS:

  • Unripe mangos should be kept on the counter and not refrigerated otherwise they will not ripen.
  • To quicken the ripening process, place mangos in a paper bag with a couple of apples in a warm place. These climacteric fruits (meaning they ripen after being harvested) will release ethylene. The ethylene will be trapped in the bag, causing it to build up and speed up the ripening process.
  • Once ripe, mangos should be moved to the refrigerator, which will slow down the ripening process.

Need the heat. Halapeno peppers work a treat ! I use this salsa whenever I do sea bass , ( lets face it , the fish we get is actually rock fish but it has the same consistency and flavour as sea bass . Chilean sea bass is extinct . ) I do it in banana leaf over hot coals and the family loves it .

What a great salsa! I used red onions, instead of green, as that is what is in the photo. I also added half a jalapeño an only used 1 tsp of canola oil, instead of the olive. Let sit on the counter for 2 hours to meld the flavours and it was amazing on grilled chicken. It was even better the next day! Am going to try it halibut tonight.

Good basic recipe but I leave out the red pepper, add in a couple of chopped serrano chilies (seeded and deveined if you do not like the heat). I also cut down on the olive oil and add no salt (it does not need salt). Great with grilled mahi-mahi fish tacos or grilled boneless chicken thighs with a red chile rub.

Loved the taste of this recipe. However, I did add a jalepeno!

This is a great recipe for serving with Ahi Tuna. The flavoring is wonderful.

Just made this in Hawaii with grilled fish - just the same as eating out if not better!

This is a great and simple recipe. I substituted purple onion for the green for more color and doubled the fresh lime juice. Be sure to make this a day before.

YUM! made tuna on the grill and put this on top. So easy and quick!

I loved this as a base, a canvas to build on. Added: jalapeno for bite, red pepper for color, vidalia, NO oil, minced fresh mint leaves, smidgin of honey, a splash of pear infused white balsamic, some Jardines Peach Salsa - not a lot. gently. I'm not a fan of cilantro. Lots & lots of fun to build from this excellent base.

If you don't like the texture of the red pepper they can be easily peeled with a regular vegetable peeler.

I added fresh pineapple and a little sugar and served it over fish. It was delightful.

Made this salsa for an "Appetizers Only" dinner party and it was a BIG hit. So easy to make too!! Served it with rice chips, instead of the usual corn chips, tostados or crackers. Was somewhat inexperienced in how to select the right mangos but an internet search solved my problem. Will DEFINITELY make again.

This salsa was PHENOMENAL! My husband and I made blackened Mahi-Mahi fillets and spread this on top. AMAZING! We like some kick in our food to brighten the flavors so we added a small, diced Thai chile and could not have been more pleased! Great recipe!

i made this to serve with the filipino london broil and i don't think it was a good match. i added some jalepeno's and left out the oil and while it was a good salsa, it didn't knock my socks off. i think it would be better with fish or chicken so will try that next time.

Liked it a lot. Added avocado for the grown-up version and left it off, as well as the onions, for the kids version. My 4 and 7 yr old liked it very much

Very good! Made with tomatoes and red onion instead of bell pepper and green onions. Also added one jalapeno and left out the olive oil! Served with cod, brown rice and steamed asparagus. It was a fairly quick, easy, and healthy dinner!

Very tasty, made as directed about three hours ahead. A good mix of flavors and textures.

Really tasty - but was missing SOMETHING - I can't put my finger on what - I feel like one little change and this would be perfecto- Went perfectly with the Filipino London Broil.
